The house edge is the percentage of every bet a casino expects to keep over the long run. It exists because winning bets pay slightly less than the true odds of winning. The gap is small, public, and derivable from two numbers you can check yourself: the probability of winning and the payout when you do.

Deriving 5.26% from the roulette wheel

An American roulette wheel has 38 pockets: the numbers 1 through 36, plus 0 and 00. Bet $1 on a single number and you'll win with probability 1 in 38, because exactly one pocket helps you. The payout for that win is 35 to 1. If payouts matched reality, a single number would pay 37 to 1, since there are 37 losing pockets for every winning one.

Now run 38 average spins at $1 each. You win once and collect $35. You lose the other 37 spins and give up $37. Net result: $35 minus $37, which is a $2 loss across $38 wagered. Divide 2 by 38 and you get 0.0526, or 5.26%. That's the American roulette house edge, and every published source, Wizard of Odds included, quotes the same figure because the arithmetic can't come out any other way.

The same method works on any bet. A European wheel drops the 00, leaving 37 pockets and the same 35 to 1 payout. Win once in 37 spins: $35 in, $36 out, a $1 loss per $37 wagered.
